Mom’s Sugo (Marinara Sauce to feed a large group)

Megan

Each Summer, my husband's parents, siblings and all their children gather at the family cabin in the mountains of Arizona. As of today, our family is 45 members strong. Feeding a family that size can be quite intimidating. We canoe in the lake, hike trails, mountain bike, and chase kids all day long. At the end of each day, everyone comes running to the dinner table with hungry appetites. One of our very favorite meals that everyone loves to eat at the Cabin is Andrea's "Sugo". It tastes best when simmered in the slow cooker on low for 4 hours.

Easy Blender Red Salsa

Megan

The original recipe for this Red Salsa came from our dear friend, Vonda from Mesa, AZ. People from Mesa know how to do salsa! It takes all of about 10 minutes to make a massive bowl of salsa, so this recipe is a keeper! I did, however make one omission to the recipe because we have a hard time finding el Pato Sauce in Utah. If you want more kick than this recipe provides, add your hot sauce of choice to taste. Since I am a whimp when it comes to spicy food, this is a very mild salsa. Enjoy!

Honey Lime Chicken Enchiladas (Instant Pot)

Megan

Every Christmas we eat these enchiladas after a fun day of opening gifts and playing games. This Christmas, I forgot to start the chicken in the slow-cooker the night before. Instant Pot to the rescue! I made our enchiladas from frozen to ready-to-eat in 60 minutes flat. The chicken was just as tender and flavorful as the slow cooker method. Enjoy! Megan

I make Mexican horchata two times each year: Neil's birthday and Christmas Day. We aren't big on beverages, but this is one we love to drink on Neil's birthday salsa night party or when we do our big Mexican Christmas dinner. It takes a little planning to blend the rice milk the night before, but other than that, this horchata is so easy to make and SO delicious. Enjoy! Three Tips for Self-Care the Day after Overeating

Megan1 comment

It's the morning after a really fun Christmas party with my favorite people and LOTS of delicious foods. I have been practicing and teaching Intuitive Eating principles for years, and even I have to remind myself how to care for my body after I eat beyond fullness now and then. This morning's belly ache is a good reminder that there's something to learn from every eating experience. The advice I give here is based on my personal experience and practices that have worked for past clients. This advice applies to anyone who experiences an occasional binge now and then. If

Light and Creamy White Chicken Chili (Stove-top or Instant Pot)

Megan

This delicious white chicken chili is a great soup to come home to on a cold day. It pleases all the palates at our family dinner table--except my non-bean eater...but I bet she will get over that food aversion in the next couple years. The milk and sour cream balance out the fire from the green chilis, so it isn't too hot for the littles. I love this dish because it is so quick and easy to make and it feeds 10 people. Serve this with my Gluten-free corn bread or my Hearty Corn Bread to round out the meal.
