Mediterranean Vegetable Salad

Ingredients

  • 4 cups Spinach loose packed
  • 2 cups Arugula loose packed
  • 1 cup Navy Beans
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumbers chopped
  • 1 avocado chopped
  • 1/4 cup Feta Cheese Crumbles Mediterranean Herb Style

Balsamic Vinaigrette

  • 1/4 cup Balsamic Vinegar
  • 1/3 cup Olive Oil
  • 1 clove garlic minced
  • 1/2 teaspoon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

Balsamic Vinaigrette

  • Combine all ingredients in jar with a tight-fitting lid. Shake until mixed well.

Salad

  • Combine spinach and arugula in a large mixing bowl. Pour half the dressing over the greens and mix until coated. Top with salad ingredients and drizzle the remaining dressing over top.
