Spicy Honey Taco Protein Bowl

This spicy (not hot) protein bowl has it all: crispy greens, sweet potatoes, savory taco meat, chewy brown rice, creamy avocados, juicy tomatoes, and the sweet and savory combo of cottage cheese sprinkled with Tajin and drizzled with honey. The best part of this nourishing and filling meal is how quickly it comes together–30 minutes or less. Enjoy this one SOON!
Spicy Honey Taco Protein Bowl
Servings 8
Ingredients
Taco Meat
- 1 pound ground beef
- 3 Tablespoons Taco Seasoning (one packet)
- 1/2 cup water
Brown Rice
- 1 1/2 Cups Brown Rice dry
- 3 1/2 Cups water
Toppings
- 8 cups Mixed Greens
- 2 large sweet potatoes (2 cups, cubed)
- 2 large avocados diced
- 2 cups tomatoes chopped
- 24 oz Cottage Cheese
- 2 Tablespoons Tajin Seasoning
- 8 teaspoons honey
Instructions
Brown Rice
- Add rice and water to a large pot. Sprinkle with a dash of salt and bring to a boil. Once the mixture is boiling, reduce the heat to low. Cook for 30 minutes until tender and chewy.
Taco Meat
- In a large saucepan or skillet, cook the ground beef until fully browned. Drain excess grease. Add the seasoning packet with 1/2 cup water. Cover and simmer for 5-10 minutes.
Toppings
- Wash the outer skin of the sweet potatoes and pierce them with a fork 3-4 times. Microwave for 2 minutes, turn the potatoes and repeat until the potatoes are soft. Peel away the skin and dice into cubes.
- Cut the tomatoes and avocados into cubes.
- Serve each item, buffet-style, in a separate bowl.
Notes
Add a little more protein and fiber with kidney or black beans.
