Anyone else out there have sandwich-haters in their family? I think I burnt my kids out on sandwiches long ago in their school lunches, so now I have to get pretty creative when packing their lunches. Here’s one that my son loves. He likes that everything can be scarfed down in 5 minutes time before running out to recess. I guess sandwiches take more time to eat? Whatever the case, his lunchbox comes home empty when I pack it this way, so I call that a win!

Ingredients

  • 8 sticks string cheese
  • 8 ounces turkey deli cut
  • 4 cups Triscuit Crackers
  • 2 cups grape tomatoes
  • 2 cups sugar snap peas
  • 4 small clementines

Instructions

  • Lay two slices of turkey meat on a clean, flat surface. Place unwrapped string cheese stick on one end of the meat. Roll the cheese into the meat and place into lunch box.
  • Arrange all other ingredients. Be sure to add ice packs.
