There's something so delicious about adding cinnamon to sliced apples. We eat these as a side dish for breakfast or a game snack at night. It's like eating apple pie but without the crust, and sugar...and ice cream. So it's not like pie at all but it's a great way to eat a lot of apples. Enjoy! Sliced Cinnamon Apples healthy, sweet snack 6 large honeycrisp apples (sliced)1 teaspoon ground cinnamon Toss sliced apples with ground cinnamon and serve immediately. Any apple variety will do. I feel so grateful that I stocked up on wheat berries before the panic of COVID-19 began. Flour sure is hard to come by right now! I grind my wheat berries into flour 2-3 times a week lately for bread, pancakes, muffins, and cornbread. Our latest favorite whole wheat side dish is this delicious and super-easy drop biscuit. It's soft, buttery, and melts in your mouth. You can use buttermilk, but I always have kefir that needs to be used up, so that is what I use. These are a great side to any dish. This week I am making
This fresh, lemon chickpea salad is full of all my kid's favorite ingredients from my Kale salad--without the kale. My boys in particular always say Kale Salad is their favorite salad I make, but they always pick the kale out. When I served this salad, they licked the plate clean. This is a great side for casseroles because it is full of fiber and protein. It is also ideal for outdoor barbecues because it won't spoil to fast while sitting out on a serving table. I'm serving it tonight with my Hearty Tuna Bake. Enjoy! Lemon Chickpea Salad Chickpea, Apple,
It's Spring Break this week and the plan was to be playing in the sand and theme parks in Southern California. Since the whole world is shut down by the Corona Virus, we are at home making the best of quarantine life. Yesterday we would have been playing at Disneyland, so we decided to pretend we were there with some simple activities. It started with a cute little 'Disney marathon' where the kids dressed in their Mickey Mouse t-shirts, loaded their bikes and strollers, and we listened to theme park music while jogging around the neighborhood. While eating parfaits for
There are a few foods I grew up assuming the rest of the world loved just as much as I did. After I left Wyoming, I learned that not everyone eats their chili with cinnamon rolls or jelly on their grilled cheese sandwiches. To each his own, I guess. The first time I made my husband "Cowboy Hats" for dinner, he was skeptical. Once he realized it was just a slightly sweeter version of ground beef and bean taco salad, he trusted my meal-planning judgment. I like to make this dish for our Taco Tuesdays, but it is always served
To celebrate having just found out who my 3rd Great-Grandparents are, and to honor the upcoming St. Patrick's Day, here's a festive meal idea full of green goodness. But first, let me just say I have been searching on Ancestry.com and familysearch.org for over 8 years to learn who my ancestors are. I have been hung up on this one couple. Just this afternoon, I found a headstone and marriage record online that confirmed who my Great-great-Grandma Mae's parents are. My 3rd Great Grandpa Andrew Sullivan was born in the Southern corner of Ireland and emigrated to America sometime in

One day this winter, all four of my kids had the barfs. To make matters worse, I didn't discover the issue until right before my play practice. So, my poor husband had to take care of everyone by himself. Not something I should talk about before selling you a great recipe, right? Wrong. After they all emptied their stomachs and had a good night's rest, my kids REALLY appreciated this simple, nourishing soup! I appreciated how fast it was to whip up. Thank goodness it was only a 24 hour bug. They were bouncing off the walls in no time.
Most often, this salad is requested as a side dish for dinner. I think it's the homemade croutons that win everyone over. They are so easy to make and taste a million times better than the bagged stuff. Make this a main dish for lunch or dinner by adding some cooked rotisserie chicken. Enjoy!
