Instant Pot Bean and Bacon Soup

Megan

Even though it is the first of May, soup season is still going strong at our house. In fact, it never really ends, because soup is so versatile and can be made ahead or frozen and reheated so flawlessly. I made this Bean and Bacon soup in the Instant Pot when we had leftover Easter ham a couple weeks ago. It turned out just as delicious as my stove-top version and everyone (except my one bean-loathing child) loved it. With a square or two of my Hearty Corn Bread, it makes for a really well-rounded, healthy weeknight meal. I hope

Barbecue Chicken Pizza on Whole Wheat Crust

Megan1 comment

Every Friday night is Pizza Night at the Andersen household. Through the years we have become quite creative with our toppings. While this one is not totally out-of-the-box, it is not made with the traditional red sauce, and therefore, it's unique. My husband and boys particularly love barbecue chicken pizza, and it is safe to say that we have mastered this deliciously sweet and savory pizza. The game-changer lies in the pizza crust, so follow my instructions on how to make the best whole wheat pizza crust. I hope you enjoy this as much as we do! Barbecue Chicken Pizza

Easy (and SO ADDICTING) Homemade Kettle Corn in the Whirly Pop®

Megan

This was one of the most difficult food photos I have ever taken. The sweet and salty combo of this kettle corn is SO ADDICTING I had a hard time pulling myself away long enough to snap a photo! This is the perfect treat to whip up while you play a game of cards or sit down to a good movie. It has just FOUR INGREDIENTS and takes all of FIVE minutes to cook up, so you don’t have to wait too long before you can start munching. For the last several years, I have opted to fill my kids’

Are Fitness Trackers Harmful or Helpful to Your Wellness Goals?

Megan

Which camp are you in? About a year ago, my Fitbit One® took its last spin through the washing machine inside my jean pockets, and it never recovered. This was the second device I had done that to, and this time I decided not to replace it. I realized it was causing more harm than good for me. When I told my husband I was going to write this article, he chimed, “Well, you better tell your friends why I still like to wear mine!” He’s right. Some people really do benefit from wearing fitness trackers like the Fitbit, Garmin,

Instant Pot Yellow Curry From Frozen Chicken

Megan2 comments

I finally figured out how to make the best chicken curry on the days when I forgot to take the chicken out of the freezer. The chicken is juicy and tender while the vegetables are still formed and not mush. The flavor is fantastic—not too spicy and not bland. You can have this dish ready from frozen chicken to cooked-to-perfection in 55 minutes. This one is a winner! Green Eggs and Ham for St. Patrick’s Day

Megan

It never gets old. I make Green Eggs and (pink) Ham every year for St. Patrick's day and it never gets old. I should make this for Dr. Suess' Birthday at the beginning of the month, but I always forget. Every year. So St. Patty's it is! It's a bit tricky and unsettling to use food coloring to make eggs and ham look green, so I do two things: First, I leave the ham alone. We just leave it pink. Sorry, Sam-I-Am, but we do not like green ham! Second, I use spinach to make the eggs green instead of

Winter Fruit and Yogurt Salad

Megan

The end of a very wet winter is coming to a close here in Utah, and the price and freshness of produce in the stores is a bit lacking. However, one of our favorite side dishes at dinnertime is fruit salad. Thus, I have come up with a salad that has the most flavor in the dead of winter without breaking the bank when produce is not at its peak. Here goes: Winter Fruit and Yogurt Salad The most flavorful and least expensive fruit to serve your family in the dead of winter 1 large honecrisp apple (chopped)1 medium grannysmith

Glazed Chocolate Turtle Cookies

Megan1 comment

I remember many a Sunday evening as a kid, drizzling chocolate glaze on turtle cookies fresh off the waffle iron. But, because my husband is not a huge fan of most things chocolate, I am guessing I put this treat away in the back of my mind. I haven't made these in years! Welp, it turns out that the kids and I ADORE these sweet waffle iron treasures, so we are bringing them back to the Andersen family treat rotation. Now, as is the case with pretty much everything I cook/bake, I have found a way to add a little

Sunday Snack Board

Megan

Sundays are my favorite day of the week. Lately, it starts with a hustle to get myself and five kids dressed in our Sunday best and out the door for church. But once that is done, I get to slow down a bit. Sundays are the only day of the week that Neil is indefinitely home with us for two meals: lunch and dinner. Thus, its the one day of the week that I try to have the simplest meal prep so I can spend my time enjoying family outside of the kitchen. Lunch is either bean and cheese crisps
