This fresh, lemon chickpea salad is full of all my kid's favorite ingredients from my Kale salad--without the kale. My boys in particular always say Kale Salad is their favorite salad I make, but they always pick the kale out. When I served this salad, they licked the plate clean. This is a great side for casseroles because it is full of fiber and protein. It is also ideal for outdoor barbecues because it won't spoil to fast while sitting out on a serving table. It's Spring Break this week and the plan was to be playing in the sand and theme parks in Southern California. Simple Chicken Noodle Soup

One day this winter, all four of my kids had the barfs. To make matters worse, I didn't discover the issue until right before my play practice. So, my poor husband had to take care of everyone by himself. Not something I should talk about before selling you a great recipe, right? Wrong. After they all emptied their stomachs and had a good night's rest, my kids REALLY appreciated this simple, nourishing soup! I appreciated how fast it was to whip up. Freezer Breakfast Burritos

Our mornings go reeeally smooth when the kids make their own breakfast. When toast and cold cereal won't cut it, the kids pull a breakfast burrito from the freezer and microwave it for 45 seconds. Boom! Round it out with a piece of fruit and glass of milk, and my kids head to school with a happy tummy. If I give myself about 60 minutes, I can assemble 24 burritos for the freezer. Mini Whole Wheat Blueberry Muffins

When I want to totally impress my kids after school, I bake them a batch of these delicious blueberry muffins. They are a bit sweeter than most muffins I make, and they make the kitchen smell like Heaven on Earth. One of my readers suggested Trader Jo's blueberries for making the best muffin.
